This old-fashioned, homemade pie features a buttery, flaky crust filled with smooth peanut butter custard, topped with whipped cream and a sweet, crumbly peanut butter topping. Ingredients

For the Pie Crust:

  • 250g all-purpose flour
  • 150g cold unsalted butter, cubed
  • 5g (1 tsp) salt
  • 5g (1 tsp) sugar
  • 60ml ice water

For the Peanut Butter Crumble:

  • 100g creamy peanut butter
  • 100g powdered sugar

For the Peanut Butter Cream Filling:

  • 500ml whole milk
  • 100g granulated sugar
  • 40g cornstarch
  • 2 egg yolks
  • 3g (½ tsp) salt
  • 5ml (1 tsp) vanilla extract
  • 150g creamy peanut butter
  • 50g unsalted butter

For the Whipped Cream Topping:

  • 250ml heavy whipping cream
  • 30g powdered sugar
  • 5ml (1 tsp) vanilla extract

Instructions

Step 1: Make the Pie Crust

  1. In a mixing bowl, combine flour, sugar, and salt. Add cold butter and cut it in with a pastry cutter or your fingers until mixture resembles coarse crumbs.
  2. Gradually add ice water, 1 tbsp at a time, until dough comes together.
  3. Shape into a disc, wrap in plastic, and refrigerate 30 minutes.
  4. Preheat oven to 190°C (375°F). Roll out dough and fit into a 9-inch pie pan. Trim edges, poke holes in the bottom, and line with parchment paper and pie weights.
  5. Bake 15 minutes, remove weights, then bake another 10 minutes until golden. Let cool completely.

Step 2: Make the Peanut Butter Crumble

  1. Mix peanut butter and powdered sugar in a small bowl until crumbly.
  2. Sprinkle half of the crumbles over the cooled pie crust.

Step 3: Prepare the Peanut Butter Cream Filling

  1. In a saucepan over medium heat, whisk together milk, sugar, cornstarch, salt, and egg yolks. Stir constantly until thickened (5–7 minutes).
  2. Remove from heat and whisk in vanilla, peanut butter, and butter until smooth.
  3. Pour filling into the pie crust over the crumbles. Refrigerate at least 3 hours to set.

Step 4: Make the Whipped Cream & Assemble

  1. Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  2. Spread or pipe whipped cream over chilled pie.
  3. Sprinkle remaining peanut butter crumbles on top.

Step 5: Serve & Enjoy
