Made with just three wholesome ingredients—fresh strawberries, unsweetened applesauce, and unflavored gelatin—this cake contains no flour, eggs, added sugar, butter, or oil. Note: Use only fresh, ripe strawberries. Frozen ones introduce too much water and affect the cake’s texture. Also, ensure your applesauce is unsweetened—sweetened versions won’t whip properly.


How to Make Strawberry Cloud Cake

  1. Prepare the Pan
    Line an 8-inch or 9-inch square pan with one large sheet of parchment paper (covering the bottom and sides). This makes it easier to lift the cake out after it sets.
  2. Puree the Fruit
    Blend strawberries and applesauce until smooth and evenly colored.
  3. Incorporate Gelatin
    Pour the puree into a heat-safe bowl. Sprinkle gelatin evenly across the surface and whisk until fully combined. The mixture should thicken slightly.
  4. Dissolve Gelatin Gently
    Use a double boiler on the stove to gently heat the mixture just enough to dissolve the gelatin. Stir constantly—do not let it boil. Once the gelatin is dissolved and the mixture is warm (not hot), remove from heat and let cool for 10 minutes.
  5. Whip It Up
    Pour the cooled mixture into the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed for about 15 minutes until the mixture has quadrupled in volume and resembles fluffy whipped cream. It should form soft peaks.
  6. Chill and Set
    Spread the whipped mixture evenly into your prepared pan. Smooth the top with a spatula. Refrigerate for at least 1 hour, or until fully set.
  7. Serve
    Slice the cake with a sharp knife. Serve chilled, optionally topped with whipped cream or your favorite light frosting.
