Ingredients
- 6 oz. (¾ cup) butter, softened
- 3.5 oz. (½ cup) superfine sugar
- 9 oz. (2¼ cups) all-purpose flour
- Raw sugar or coarse granulated sugar for coating (about ½ cup)

In a mixing bowl, beat the butter and superfine sugar until light and fluffy. - Form the Dough
Gradually sift in the all-purpose flour and knead into a smooth dough. - Shape the Dough
On a flat surface, mold the dough into a long rectangular prism shape. Roll the dough in a layer of raw sugar until coated evenly. - Refrigerate
Wrap the sugared dough in cling film and refrigerate for at least 1 hour. - Slice and Bake
Preheat your oven to 325°F (165°C). Slice the dough into squares and place them on a parchment-lined baking sheet. Bake for 20 minutes or until lightly golden.
Notes
- Butter Softening Tip: If the butter isn’t softened, cut it into small pieces and microwave briefly until slightly soft (but not melted).
- DIY Superfine Sugar: Make superfine sugar at home by blending regular granulated sugar in a food processor or blender until finely ground.
- Baking Space: These cookies don’t spread much, so you can place them close together on the baking sheet.
