These bite-sized delights are gluten-free, naturally sweetened, and make a great snack, dessert, or gift. Plus, they’re portable, easy to store, and perfect for satisfying chocolate cravings anytime.


Ingredients

  • 2 cups unsweetened shredded coconut (store-bought or homemade)
  • 1 cup sweetened condensed milk (or coconut condensed milk for a vegan option)
  • 3.5 oz dark chocolate (or chocolate chips, 65–80% cocoa)

Instructions

  1. Mix Coconut and Condensed Milk
    In a large bowl, combine the shredded coconut and condensed milk. Mix thoroughly until it forms a thick, sticky mixture. You can use your hands, a spoon, or a fork.
  2. Form Balls
    Scoop 1–2 tablespoons of the mixture and roll into balls. Aim for 1–2-inch bites for easy snacking. Place them on a lined baking sheet.
  3. Chill the Coconut Balls
    Refrigerate the balls for 15–30 minutes to firm up. For a quicker option, freeze for 5–10 minutes.
  4. Melt the Chocolate
    Melt the chocolate using a microwave (in 20–30 second bursts, stirring in between) or a double boiler until smooth.
  5. Dip in Chocolate
    Dip each chilled coconut ball into the melted chocolate, ensuring it is fully coated. Use a fork, skewer, or spoon to transfer the balls onto a wire rack lined with parchment paper.
  6. Set the Chocolate
    Let the chocolate harden at room temperature, then transfer the balls to the fridge to cool completely. Optional: sprinkle with sea salt or drizzle additional chocolate for a decorative touch.

Storage

  • Room Temperature: Store in an airtight container in a cool, dry place for up to 5 days.
  • Refrigerator: Keep in an airtight container for up to 2 weeks.
  • Freezer: Freeze in a sealed container or bag for up to 3 months. Thaw for 10–15 minutes before serving.
