Texas Cowboy Stew

Ingredients

  • 2 lbs ground beef
  • 2 packages kielbasa sausage, sliced into ½-inch pieces
  • 2 garlic cloves, minced
  • 1 onion, chopped
  • 2 (14.5 oz) cans peeled and diced tomatoes, drained
  • 4 medium baking potatoes, peeled and diced
  • 2 (15 oz) cans pinto beans, with liquid
  • 1 (15.2 oz) can whole kernel corn, drained
  • 2 (14.5 oz) cans diced tomatoes with green chilies, with liquid
  • 1 (10 oz) package frozen mixed vegetables
  • 4 cups water
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • Salt and pepper to taste

Instructions

  1. Sauté the Aromatics:
    In a large Dutch oven over medium heat, sauté the onion until softened. Add minced garlic and cook for 1 minute until fragrant.
  2. Brown the Beef:
    Add ground beef to the pot and cook until browned, breaking it up with a spoon. Ensure no pink remains.
  3. Add the Sausage:
    Stir in the sliced kielbasa sausage, cooking for 2–3 minutes until slightly browned.
  4. Combine the Ingredients:
    Pour in the drained tomatoes, pinto beans (with liquid), corn, diced potatoes, tomatoes with chilies (with liquid), and frozen mixed vegetables. Mix well to combine.
  5. Season and Simmer:
    Add cumin, chili powder, salt, and pepper. Pour in 4 cups of water, stir, and bring the mixture to a boil. Reduce heat to low and simmer for 1 hour, stirring occasionally, until potatoes are tender and flavors meld together.
  6. Serve and Enjoy:
    Ladle the stew into bowls and serve hot. Perfect with crusty bread or over rice for a hearty meal!
